At Mayo Clinic Hospital, Saint Marys Campus, the reopening of Domitilla Kitchen introduces a coordinated, two-kitchen production model designed to improve efficiency, strengthen quality and enhance the patient experience.
Rather than relying on a single centralized kitchen, meal production now shifts dynamically between locations based on geography, patient census, and real-time capacity. This approach reduces congestion, minimizes tray transit distance, and supports more consistent delivery times and improved temperature integrity at the point of service.
“The reopening of Domitilla Kitchen directly supports Mayo Clinic’s commitment to patient-centered care by reinforcing our core principle of putting the needs of the patient first,” said Aaron Clark, Food Services Operations, Mayo Clinic. “This model restores on-campus production capacity, allowing us to prepare and serve meals closer to the point of care with greater attention to quality, safety, and individual patient preferences.”
The added capacity strengthens coordination across care teams, improving collaboration with nursing, dietitians, and clinical partners while supporting comfort, recovery, and overall care delivery.
Operationally, the model improves throughput and reduces strain during high-census periods. Enhanced trayline workflows support more reliable delivery windows and help preserve food quality from kitchen to bedside.
“Balance is critical in an operation the size of Saint Marys,” said Mark, regional director of operations, Rochester campus. “With three room service lines across two kitchens, we can distribute volume more effectively, supporting 200 to 250 patient meals per period per line while achieving 95% of meals delivered within our 45-minute standard.”
The reopening also supports a more consistent dining experience across Saint Marys, with standardized processes that benefit patients with extended stays or specialized dietary needs.
As Domitilla Kitchen resumes its role within the broader production network, the model continues to focus on innovation, collaboration, and a patient-first approach to care.
