Quick Breakfast Idea: Pumpkin Pie Oatmeal with Pecans

Each fall pumpkins take center stage and for good reason! Pumpkins can be used in a variety of recipes, they are rich in antioxidant beta carotenes, and pumpkin seeds offer protein and key minerals. In other words, they aren’t just for carving!

So as the temperatures drop and you start craving something warmer in the mornings, we have a recipe to help you incorporate pumpkin into a hearty, delicious breakfast.

Pumpkin Pie Oatmeal with Pecans

This recipe yields six servings and is a great idea for a quick breakfast because it takes so little prep and cook time.

  • 2 cups Old Fashioned Oatmeal Cereal, Dry
  • 4-½ cups Water
  • 1 tbsp Ground Cinnamon
  • 1-½ tsp Ground Ginger
  • 1 tsp Ground Nutmeg
  • ¼ cup Dark Molasses
  • 1 cup Pumpkin Puree, Canned
  • 6 tbsp Pecan Halves, Chopped


  • Place all ingredients (except for pumpkin puree and pecans) into a pot and bring to a boil.
  • Simmer for 5 minutes and fold in pumpkin puree.
  • Stir to heat through.
  • Serve with toasted pecans on the side.
