We are minimizing both food and packaging waste to lessen our environmental impact. Our chefs carefully consider ways they can prioritize the journey of our ingredients–driving innovation and recipe development with both sustainability and cost savings as key considerations.

Waste Not 2.0

Our Waste Not 2.0 platform tracks, measures and reduces food waste in four critical areas: production, overproduction, unused/out-of-date inventory and open inventory, inspiring our chefs and their teams to take ownership of food waste reduction at its source.

The Rule of 5

The Rule of 5 ensures that our culinary teams incorporate ingredients into a minimum of 5 dishes across your operation prior to delivery, helping our chefs thoughtfully purchase, develop, and inventory products that support our initiatives and those of our clients.

Our Root-to-Stem Recipes

Our recipes use local, seasonal ingredients, and cross-utilizing them to maximize value, cost, and minimize waste and ensure that every ingredient used in the dishes is cross utilized through multiple applications.

Stop Food Waste Day

To further awareness and engagement, Stop Food Waste Day is observed annually during the last week of Earth Month to inform clients and our guests about the environmental, social and financial impact of food waste. This international day of action supports best practices at home and in the organizations we support.

Journey to Zero Waste

We are addressing the pressing concern of waste of resources in other ways through green packaging, reusables, recycling, and uniforms made from recycled materials. In addition to reducing food waste to landfill, our efforts Toward Zero Waste include partnering with our clients and facilities to divert waste with data driven goals to Reduce, Reuse, and Recycle.

  • Reduce by being mindful to only take what is needed.
  • Reuse over single-use packaging.
  • Recycle to collect materials to turn them into new products including closed loop systems and compost products made from renewable plant materials when commercial composting is available in the local municipality.
